In the next two weeks we will be going camping for our first ( second) time in our camper. We're hoping all goes well this and every time after.

We went camping this weekend, everything worked out great, but now I'm wondering how big my gray water take is as after two days , two people showing twice, the shower water is slow to drain.

That sounds about right. What does you tank level meter say? (4 lights, full?) 5 minute showers at 3 GPM x 4 would be 60 gallons. The largest gray water tank size on the Sonic Lite series is on the SL169VRK and is 56 gallons. Get yourself a sewer pipe cap with a screw-on water hose nipple and a 12' length of black washing machine hose (cut 1 end off) - and never worry about grey water again...
